Fillet knives tend to be used specifically on fish, as they move easily along the backbone and under the skin of the fish. Sheffield Choice + blades are made from a single piece of high carbon stainless steel and are precision ground to provide excellent strength, flexibility and lasting sharpness. The handles are shaped to fit perfectly in the hand, the endstop preventing the knife from accidentally slipping. Each is secured with three solid brass rivets and hand finished by Sheffield craftsmen in the same tradition as they have been for generations.
